Red potato salad with sriracha and vinegar-marinated celery

Ingredients:
- 2 red potatoes, diced
- 2 small celery stalks, diced
- 1/2 teaspoon ginger, finely minced
- 1 large garlic clove, minced
- 2 tablespoons garlic aioli
- 1 tablespoon soy sauce
- 1 tablespoon sriracha
- 1 teaspoon chopped cilantro
- 1/2 green apple, diced
- 1 teaspoon brown sugar
- 2/3 cup red wine vinegar
Instructions:
- Start by boiling a saucepan full of water. Once it's bubbling, add a dash of salt and some diced potatoes. Boil them until they are easily pierced with a fork but still hold their shape.
- While the potatoes are cooking, put celery in a bowl and cover them with red wine vinegar. Mix in brown sugar, salt, and black pepper.
- Combine all the remaining ingredients in another bowl and mix well.
- Once the potatoes are cooked, drain them and transfer to a bowl of ice water. Allow them to cool off completely by adding more ice if necessary.
- Mix the drained potatoes and celery into the combined ingredients. Stir everything together until well mixed. Season with salt and pepper to taste, but keep in mind the saltiness from the soy sauce.
- Finish off by sprinkling sesame seeds over the potato salad. Your dish is now ready to be served!
