Red grapes kaiserschmarrn

Delight in a flavorful blend of red grapes mixed with the iconic kaiserschmarrn for a refreshing and unique salad experience. Bon appétit!

Ingredients:

  • • 1 1/2 cups red seedless grapes, washed and dried
  • • 1 cup crème fraîche
  • • 5 large eggs, separated
  • • 1/4 cup + 2 tablespoons confectioners' sugar, sifted
  • • Pinch of salt
  • • 3/4 cup all-purpose flour + 1/4 cup cornstarch, sifted together
  • • 2 tablespoons butter +1 tablespoon butter, melted
  • • confectioners' sugar, for dusting
  • • 1/2 cup crème fraîche
  • • 1 tablespoon Maple or Agave syrup
  • • 1/2 teaspoon ground cinnamon
  • • 2 teaspoons of each, lemon zest and juice
  • • 1 tablespoon fresh mint or basel, chopped
  • • 1 cup white seedless grapes, halved lengthwise

Instructions:

  1. Whisk egg whites until they form soft peaks; then add a pinch of salt, followed by the confectioners’ sugar gradually. Keep whisking until the mixture becomes stiff and glossy.
  2. Beat egg yolks and sugar until the mixture turns a light shade of yellow. Gradually add crème fraîche and a mixture of flour and cornstarch, little by little to prevent clumps from forming. Stir in zest and vanilla extract.
  3. Gently incorporate the whipped egg whites into the mixture. Allow the batter to sit for approximately 20 minutes. (This step can be done up to 1 day ahead).
  4. Heat up a large skillet (12 inches in diameter) and melt 2 tablespoons of butter in it. Give the batter a light stir before pouring it into the hot skillet. Sprinkle the grapes evenly on top. Cover the skillet and let the pancake cook over medium heat for about 10 minutes.
  5. Carefully flip the pancake (you may need to cut it into smaller portions for easier flipping). Transfer it gently onto a large platter, then use large spatulas to flip it to the other side. Drizzle the remaining melted tablespoon of butter over it and continue cooking. Once it turns golden brown, it is ready to be served.
  6. Dust with confectioners' sugar and serve while hot alongside the refreshing grape and crème fraîche salad. For the salad: Combine the first five ingredients in a mixing bowl, add in the grapes, toss to coat, and serve with the warm Kaiserschmarrn.
