Red grapefruit, feta and mint salad

Delight your palate with a vibrant combination of red grapefruit, creamy feta cheese, and refreshing mint in this zesty and savory salad.

Ingredients:

  • 2 sweet red grapefruits
  • 1 medium cucumber, halved lengthwise and thinly sliced
  • 1 small red onion, thinly sliced
  • 3/4 cup kalamata olives (halved if they're large)
  • 2 tablespoons good balsamic vinegar
  • salt
  • 1 cup crumbled feta

Instructions:

  1. With a sharp knife, trim the ends of the grapefruits, cutting to reveal the fruit. Remove the rest of the peel and white pith. Next, in a spacious bowl, extract the grapefruit segments by cutting along the membranes. Cut the segments in half.
  2. Combine the grapefruit with cucumber, onion, olives, and mint. Drizzle in the vinegar, season with salt, and mix well. Arrange on 4 to 6 plates or a single large platter, then crumble feta on top.
