Red grapefruit, feta and mint salad

Ingredients:
- 2 sweet red grapefruits
- 1 medium cucumber, halved lengthwise and thinly sliced
- 1 small red onion, thinly sliced
- 3/4 cup kalamata olives (halved if they're large)
- 2 tablespoons good balsamic vinegar

- 1 cup crumbled feta
Instructions:
- With a sharp knife, trim the ends of the grapefruits, cutting to reveal the fruit. Remove the rest of the peel and white pith. Next, in a spacious bowl, extract the grapefruit segments by cutting along the membranes. Cut the segments in half.
- Combine the grapefruit with cucumber, onion, olives, and mint. Drizzle in the vinegar, season with salt, and mix well. Arrange on 4 to 6 plates or a single large platter, then crumble feta on top.
