Red cabbage salad

Tangy red cabbage salad drizzled with zesty vinaigrette, bursting with crisp textures and bold flavors. A delightful dish to elevate any meal.

Ingredients:

  • 1/2 medium sized red cabbage, finely sliced
  • 2 - 3 tablespoons apple cider vinegar
  • scant 1 teaspoons sea salt
  • Zest of 1 lemon
  • 1 teaspoon caraway seeds
  • 1/4 cup goji berries
  • Freshly ground black pepper

Instructions:

  1. Put the red cabbage in a bowl along with the vinegar and salt.
  2. Using your clean hands, gently rub the cabbage for a couple of minutes until you notice the red cabbage becoming tender.
  3. Include the remaining ingredients and mix thoroughly.
  4. Enjoy right away or refrigerate covered for a maximum of 5 days.
