Red cabbage salad

Ingredients:
- 1/2 medium sized red cabbage, finely sliced
- 2 - 3 tablespoons apple cider vinegar
- scant 1 teaspoons sea salt
- Zest of 1 lemon
- 1 teaspoon caraway seeds
- 1/4 cup goji berries
- Freshly ground black pepper
Instructions:
- Put the red cabbage in a bowl along with the vinegar and salt.
- Using your clean hands, gently rub the cabbage for a couple of minutes until you notice the red cabbage becoming tender.
- Include the remaining ingredients and mix thoroughly.
- Enjoy right away or refrigerate covered for a maximum of 5 days.
