Raw zucchini salad

Ingredients:
- 2 zucchini
- Small handful fresh parsley, finely chopped
- Juice of 1 lemon
- Juice of 1 lime
- Extra-virgin olive oil, for drizzling
- Kosher salt and freshly ground black pepper
Instructions:
- Trim the edges of the zucchini. With a mandolin or vegetable peeler, shave thin pieces of zucchini into a bowl. Combine with the parsley. Mix with the lemon and lime juice, a little olive oil, and season with salt and pepper as desired.
