Raw kale salad with roasted garlic dressing

Ingredients:

  • 2 bunches kale
  • ½ cup freshly grated Parmesan cheese
  • ⅓ cup extra-virgin olive oil
  • ¼ cup lemon juice
  • 3 large cloves garlic, minced
  • 1 tablespoon reduced-sodium soy sauce
  • 1 minced anchovy fillet or 1/2 teaspoon anchovy paste (optional)
  • ½ teaspoon freshly ground pepper
  • ¼ teaspoon salt

Instructions:

  1. Remove the kale leaves from the stems, making sure to discard the stems. Rinse and pat the leaves dry. Tear the leaves into small pieces and place them in a spacious bowl. Combine Parmesan cheese, oil, freshly squeezed lemon juice, garlic, soy sauce, anchovy (if preferred), black pepper, and salt. Use your clean hands to vigorously massage and crush the kale leaves to infuse all the flavors. Stop once the volume of the greens reduces by approximately half. The leaves should appear slightly darker and shiny. Taste the salad and adjust the seasoning by adding more Parmesan, lemon juice, garlic, soy sauce, and/or black pepper, if needed.
