Raw buckwheat salad

- 4-5 bunches Mint
- 8 bunches cilantro
- 3 bunches green onion
- 8 bunches dill
- 1 fresh lemon juice
- 4 tablespoons extra virgin olive oil
Instructions:
- Pour enough fresh drinking water to just cover the surface - approximately 1/4 inch deep
- Allow the buckwheat to sit in water for 2 hours or overnight until it has soaked up all the liquid.
- Mix in the diced herbs, salt, pepper, lemon juice, and olive oil. Blend well and then it is ready to be served!
