Raw buckwheat salad

Ingredients:

  • 2 cups buckwheat
  • 4-5 bunches Mint
  • 8 bunches cilantro
  • 3 bunches green onion
  • 8 bunches dill
  • 1 fresh lemon juice
  • 4 tablespoons extra virgin olive oil

Instructions:

  1. Pour enough fresh drinking water to just cover the surface - approximately 1/4 inch deep
  2. Allow the buckwheat to sit in water for 2 hours or overnight until it has soaked up all the liquid.
  3. Mix in the diced herbs, salt, pepper, lemon juice, and olive oil. Blend well and then it is ready to be served!
