Raw beet salad

Discover the delightful flavors of our raw beet salad with a harmonious blend of earthy beets, zesty vinaigrette, and fresh herbs. A culinary delight!

Ingredients:

  • 1 shallot, minced
  • 2 tablespoons red wine vinegar (or whichever vinegar you favor)
  • 450g beets (larger are easier to grate)
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon fresh black pepper
  • 1 1/2 teaspoons strong mustard
  • 1 1/2 tablespoons Extra Virgin Olive Oil
  • 1 tablespoon chopped fresh herbs (parsley, chives, thyme)

Instructions:

  1. Put shallot into the bowl where you will make the dressing.
  2. Combine vinegar with shallots and allow to rest for at least half an hour.
  3. Remove the skin and edges from the beets.
  4. Shred beets into a large bowl. Allow to rest for around ten minutes. Dispose of any extra beet juice. (keep it for a nutritious addition!)
  5. Mix salt, pepper, mustard, and olive oil with the shallots and vinegar in the bowl. Blend well using a whisk.
  6. Include chopped fresh herbs and stir again. (You can skip this step if you prefer)
  7. Drizzle the dressing over the beets. Serve immediately or store in the refrigerator.
