Raw beet salad
Discover the delightful flavors of our raw beet salad with a harmonious blend of earthy beets, zesty vinaigrette, and fresh herbs. A culinary delight!
Ingredients:
- 1 shallot, minced
- 2 tablespoons red wine vinegar (or whichever vinegar you favor)
- 450g beets (larger are easier to grate)
- 1/2 teaspoon sea salt
- 1/4 teaspoon fresh black pepper
- 1 1/2 teaspoons strong mustard
- 1 1/2 tablespoons Extra Virgin Olive Oil
- 1 tablespoon chopped fresh herbs (parsley, chives, thyme)
Instructions:
- Put shallot into the bowl where you will make the dressing.
- Combine vinegar with shallots and allow to rest for at least half an hour.
- Remove the skin and edges from the beets.
- Shred beets into a large bowl. Allow to rest for around ten minutes. Dispose of any extra beet juice. (keep it for a nutritious addition!)
- Mix salt, pepper, mustard, and olive oil with the shallots and vinegar in the bowl. Blend well using a whisk.
- Include chopped fresh herbs and stir again. (You can skip this step if you prefer)
- Drizzle the dressing over the beets. Serve immediately or store in the refrigerator.
