Raw asparagus, herb, and pistachio salad
Fresh asparagus combined with aromatic herbs and crunchy pistachios create a vibrant and flavorful salad bursting with texture and taste. Perfect for a light and satisfying meal.
Ingredients:
- 1/4 teaspoon fine sea salt
- 1/8 teaspoon freshly ground black pepper
- 1 teaspoon freshly grated lemon zest
- Juice of 1 medium lemon (about 2 tablespoons)
- 1 shallot, minced
- 3 tablespoons extra-virgin olive oil
- 450g asparagus, tough ends snapped off and discarded
- 1.75 cups fresh flat-leaf parsley leaves
- 1/4 cup fresh tarragon leaves
- 2/3 cup shelled unsalted pistachios, toasted in a dry skillet
- 110g high-quality Parmesan cheese, shaved with a vegetable peeler
Instructions:
- Combine the salt, pepper, lemon zest, lemon juice, and shallot in a small bowl. Slowly pour in the oil while whisking continuously until everything is well mixed. Adjust seasoning with more salt and pepper if required.
- Place the asparagus on a big cutting board and cut them into thin slices at an angle, handling a few stalks at a time.
- Move the cut asparagus to a spacious serving bowl, mix in the parsley, tarragon, and pistachios, then drizzle the lemon dressing on top. Mix thoroughly and sprinkle the shaved Parmesan right before you serve.
