Raw artichoke, celery, and parmesan salad

Ingredients:
- Tbsp. extra-virgin olive oil
- Tbsp. fresh lemon juice
- Kosher salt and freshly ground black pepper
- baby artichokes (about 1 lb.), stems trimmed
- cup thinly sliced celery
- Tbsp. chopped fresh flat-leaf parsley
- Tbsp. chopped fresh mint
- oz. shaved Parmesan
- 4 servings
Instructions:
- Combine oil and juice in a medium bowl, then add salt and pepper to the dressing. For each artichoke, remove outer leaves until only light green ones are left. Trim the top by cutting off 1/2 inch, and remove dark green parts around the stem and heart. Thinly slice the artichokes lengthwise and coat them in the dressing. Continue this process with the rest of the artichokes. Add celery and other remaining ingredients to the mixture, then season with salt and pepper again. Place everything on a platter and sprinkle with cheese on top.
