Ingredients:

  • 340g fresh mushroom ravioli
  • 2 tablespoons olive oil
  • 2 tablespoons minced garlic
  • 1/4 cup raisins, soaked previously for one hour in hot water
  • 5 cups arugula, washed and dried with salad spinner or kitchen towel
  • 1/4 cup cream
  • salt and pepper to taste

Instructions:

  1. Bring a pot of water to a boil for the ravioli, then add the ravioli and cook for 4 to 6 minutes.
  2. When the ravioli has about 4 minutes left to cook, heat olive oil over medium heat in a large pan.
  3. Saute the pine nuts for approximately a minute in the pan.
  4. After that, add the garlic and saute for another minute, being careful not to let it brown.
  5. Stir in the raisins and arugula and cook for 20 to 30 seconds.
  6. Once the arugula starts to wilt, pour in the cream and let it simmer for 1 minute.
  7. Take both pans off the heat, then drain the ravioli.
  8. Serve the ravioli in a bowl topped with the arugula and other sauce elements. Enjoy immediately.
