Ravioli with arugula, pine nuts & raisins
Indulge in the delectable mix of tender ravioli paired with peppery arugula, crunchy pine nuts, and sweet raisins. A burst of flavors in every bite.
Ingredients:
- 340g fresh mushroom ravioli
- 2 tablespoons olive oil
- 2 tablespoons minced garlic
- 1/4 cup raisins, soaked previously for one hour in hot water
- 5 cups arugula, washed and dried with salad spinner or kitchen towel
- 1/4 cup cream
- salt and pepper to taste
Instructions:
- Bring a pot of water to a boil for the ravioli, then add the ravioli and cook for 4 to 6 minutes.
- When the ravioli has about 4 minutes left to cook, heat olive oil over medium heat in a large pan.
- Saute the pine nuts for approximately a minute in the pan.
- After that, add the garlic and saute for another minute, being careful not to let it brown.
- Stir in the raisins and arugula and cook for 20 to 30 seconds.
- Once the arugula starts to wilt, pour in the cream and let it simmer for 1 minute.
- Take both pans off the heat, then drain the ravioli.
- Serve the ravioli in a bowl topped with the arugula and other sauce elements. Enjoy immediately.
