Ramen noodle salad

Ingredients:
- 2 ramen noodles
- 1 chicken breast, cut into pieces
- ½ tsp chilli powder
- 1 tsp sweet paprika
- ½ tsp garlic powder
- 1 tbsp olive oil
- 1 red pepper, cut into chunks
- 150g frozen or canned sweetcorn, drained
- 5 pickled cucumbers, sliced
- 3 tbsp mayonnaise
- 1 tsp Dijon mustard
Instructions:
- Place the noodles in a bowl, then crush them slightly and pour hot water over them. Cover and let them expand (you can include the seasoning packets from the noodles, if desired).
- Coat the chicken with chili, paprika, garlic, and some salt. Warm up the oil in a pan, then sauté the chicken until it turns golden and is fully cooked.
- Once the noodles are drained, mix them with the vegetables. Stir in the mayonnaise and mustard, then carefully combine everything and place the chicken on top. Refrigerate for 30 minutes before serving – you can decorate with fresh herbs, if preferred.
