Radish, snap pea & burrata salad

Discover the delightful blend of crunchy radish, crisp snap peas, and creamy burrata in this refreshing salad. Perfect for a light, flavorful meal.

Ingredients:

  • 1 small bunch radishes
  • 2 cups (160 grams) sugar snap peas
  • 3/4 cup (45 grams) minced chives
  • 1 ball burrata
  • Juice and zest of 1 very small lemon
  • Olive oil
  • Flaky sea salt
  • Freshly ground black pepper

Instructions:

  1. Prepare the vegetables: Clean the radishes thoroughly, remove the greens and root ends. Cut the radishes into thin slices using a mandoline or a knife, or simply quarter them. Clean the snap peas, trim the ends, and remove the strings. Cut the snap peas diagonally. Chop the chives.
  2. Take a large plate and break up the burrata into pieces. (You can cube the burrata, but it's just as simple to tear it into pieces and scatter them over the plate.) Next, arrange the radishes on top of the burrata, followed by the snap peas and chives. Squeeze the lemon and grate the zest over the plate, then drizzle a generous amount of olive oil over everything. Sprinkle with sea salt (approximately 1/8 teaspoon) and add a few twists of black pepper. Serve with bread for dipping.
