Radish salad with parmesan

Ingredients:

  • 2 tablespoons white-wine vinegar
  • 2 tablespoons finely chopped shallot
  • 1 ½ teaspoons Dijon mustard

  • ⅓ cup extra-virgin olive oil
  • 450g mixed radishes (such as Easter egg, French breakfast and/or watermelon radishes), thinly sliced
  • ½ cup thinly sliced celery
  • 1 cup loosely packed fresh flat-leaf parsley leaves
  • ½ cup shaved Parmesan cheese

Instructions:

  1. Combine vinegar, shallot, mustard, and salt in a big bowl. Gradually pour in oil while constantly whisking. Mix in radishes and celery; stir well. Carefully mix in parsley and Parmesan. Allow it to sit at room temperature for around 15 minutes for the flavors to blend.
