Radish salad with parmesan

Ingredients:
- 2 tablespoons white-wine vinegar
- 2 tablespoons finely chopped shallot
- 1 ½ teaspoons Dijon mustard
- ¼ teaspoon salt
- ⅓ cup extra-virgin olive oil
- 450g mixed radishes (such as Easter egg, French breakfast and/or watermelon radishes), thinly sliced
- ½ cup thinly sliced celery
- 1 cup loosely packed fresh flat-leaf parsley leaves

Instructions:
