Radish salad with anchovy sauce

Ingredients:

  • 1 large bunches radishes
  • 1 anchovy fillet
  • 1 small garlic clove, peeled
  • Salt
  • 1/2 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon coarsely chopped capers
  • 1/2 tablespoon chopped flatleaf parsley

Instructions:

  1. Remove the top and bottom parts of the radishes. Clean them thoroughly. Cut each radish into 4 pieces (for small radishes) or 6 pieces (for large radishes).
  2. Using a mortar and pestle (or a small food processor), crush the anchovy, garlic, and a bit of salt until it becomes a paste. Combine the lemon juice, then gradually mix in the oil, pouring it slowly while stirring. Gently mix in the capers.
  3. Mix the prepared sauce and chopped parsley with the radishes until they are thoroughly combined. Taste and adjust the seasoning with more lemon juice and salt if needed. Serve within half an hour.
