Radish, celery & cucumber salad

Ingredients:

  • 1 English cucumber, very thinly sliced
  • 3 stalks celery, very thinly sliced, plus celery leaves for garnish
  • 4 medium radishes, very thinly sliced
  • 3 tablespoons extra-virgin olive oil
  • 1 teaspoon grated lemon zest
  • 2 tablespoons lemon juice
  • ¼ cup freshly grated Parmesan cheese
  • ½ teaspoon flaky sea salt, such as Maldon
  • ¼ teaspoon ground pepper

Instructions:

  1. Mix together cucumber, celery, and radishes in a spacious bowl. Blend olive oil and freshly squeezed lemon juice in a tiny bowl or shake together in a half-pint mason jar.
  2. Right before serving, pour the dressing over the salad. Present topped with grated lemon peel, cheese, salt, and pepper. Optionally, adorn with celery foliage.
