Radish and cucumber salad

Ingredients:

  • 2 English cucumbers, thinly sliced
  • 2 bunches French breakfast radishes, trimmed and thinly sliced on a mandoline 
  • 1/2 cup apple cider vinegar 
  • 2 tablespoons extra-virgin olive oil 
  • 2 tablespoons minced shallot 
  • 2 tablespoons chiffonade fresh tarragon 
  • 1 teaspoon sugar 
  • Kosher salt and freshly ground black pepper 

Instructions:

  1. Submerge the cucumbers and radishes in a container filled with ice water for 8 to 10 minutes.
  2. While waiting, combine apple cider vinegar, oil, shallots, tarragon, and sugar in a spacious bowl. Add salt and pepper to taste.
  3. Remove the cucumbers and radishes from the ice water and transfer them to a bowl. Pour the vinaigrette dressing on top. Sprinkle with salt and pepper. Serve without delay.
