Radish and cucumber salad

Ingredients:
- 2 English cucumbers, thinly sliced
- 2 bunches French breakfast radishes, trimmed and thinly sliced on a mandoline
- 1/2 cup apple cider vinegar
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons minced shallot
- 2 tablespoons chiffonade fresh tarragon
- 1 teaspoon sugar
- Kosher salt and freshly ground black pepper
Instructions:
- Submerge the cucumbers and radishes in a container filled with ice water for 8 to 10 minutes.
- While waiting, combine apple cider vinegar, oil, shallots, tarragon, and sugar in a spacious bowl. Add salt and pepper to taste.
