Radicchio salad with sourdough dressing

Ingredients:
- ounces sourdough bread, crust removed, torn into small pieces (about 1 cup), divided
- tablespoon plus ⅓ cup olive oil
- Kosher salt and freshly ground black pepper
- small garlic clove
- tablespoons red wine vinegar
- teaspoon Dijon mustard
- teaspoon sugar
- head radicchio, leaves separated, torn if large
- scallions, thinly sliced
Instructions:
- Heat the oven to 425°. Mix half of the bread with 1 tablespoon of oil on a baking sheet with edges; add salt and pepper. Bake and stir occasionally until the bread turns golden brown, for about 8 to 10 minutes.
- Blend garlic, vinegar, mustard, sugar, remaining bread, and 2 tablespoons of water in a blender until well mixed; allow it to sit for 5 minutes to allow the bread to soften. While the blender is running, slowly pour in the remaining one-third cup of oil; blend until the mixture becomes smooth (the bread will mix into the dressing, thickening and adding flavor, while still retaining some texture), which should take about 2 minutes. Season with salt and pepper.
- Mix radicchio, scallions, croutons, and dressing in a large bowl; add salt and pepper to taste.
