Radicchio-red onion side salad

Savor the vibrant flavors of fresh radicchio and red onion in this exquisite side salad. A perfect balance of bitter and sweet for a delightful culinary experience.

Ingredients:

  • 2 medium cucumbers, or 1 large English cucumber
  • ¼ cup rice vinegar
  • 1 teaspoon sugar
  • ¼ teaspoon salt
  • 2 tablespoons sesame seeds, toasted (see Tip)

Instructions:

  1. Remove the skin of the cucumbers, leaving some green stripes. Cut the cucumbers in half lengthwise and remove the seeds using a spoon. Use a sharp knife or a wide vegetable peeler to slice them thinly. Put the slices in between two paper towels and press gently to get rid of any extra water.
  2. Mix vinegar, sugar, and salt in a medium bowl until dissolved. Add the cucumbers and sesame seeds; mix thoroughly. Serve right away.
