Radicchio-red onion side salad

Ingredients:
- 2 medium cucumbers, or 1 large English cucumber
- ¼ cup rice vinegar
- 1 teaspoon sugar
- ¼ teaspoon salt
- 2 tablespoons sesame seeds, toasted (see Tip)
Instructions:
- Remove the skin of the cucumbers, leaving some green stripes. Cut the cucumbers in half lengthwise and remove the seeds using a spoon. Use a sharp knife or a wide vegetable peeler to slice them thinly. Put the slices in between two paper towels and press gently to get rid of any extra water.
- Mix vinegar, sugar, and salt in a medium bowl until dissolved. Add the cucumbers and sesame seeds; mix thoroughly. Serve right away.
