Radicchio cranberry bean salad with figs
Delight in the flavors of bitter radicchio, sweet cranberries, creamy beans, and luscious figs in this vibrant and fulfilling salad.
Ingredients:
- 1 large head radicchio
- 2 1/2 cups cooked cranberry beans
- 1/3 cup pecans
- 1/2 cup dried black mission figs, sliced crosswise
- 1/2 cup crumbled blue cheese
- 1/3 cup balsamic vinegar
- 1/3 cup olive oil
- 1 tablespoon maple syrup
- 1 teaspoon dijon mustard
Instructions:
- Cut the radicchio into two halves, discard the core, and roughly chop into small pieces. Put them in a big bowl and mix with the nuts, figs, and cheese.
- Put all the dressing components in a jar with a secure lid. Shake well to mix them together.
- Mix the dressing with the salad. Add kosher salt to taste.
