Radicchio and plum salad

Ingredients:
- slices bacon
- small shallot, finely chopped
- tablespoons sherry vinegar
- tablespoons olive oil
- teaspoon Dijon mustard
- head of radicchio, leaves separated, larger leaves torn
- plums, cut into wedges
- cup Gaeta olives
- Kosher salt, freshly ground pepper
Instructions:
- Fry bacon in a medium skillet over medium-low heat without oil, flipping occasionally, until it becomes crispy, for about 8 to 12 minutes. Then, place the bacon on paper towels to remove excess oil.
- Lower the heat to a gentle simmer and sauté shallots in the same skillet, stirring occasionally until they turn translucent, which should take around 2 minutes. Next, incorporate vinegar, oil, mustard, and 1 tablespoon of water into the skillet. Whisk the ingredients together until you achieve a smooth mixture.
- In a large bowl, mix radicchio, plums, and olives together. Pour the prepared dressing over the mixture; season with salt and pepper. Toss everything well to ensure the dressing coats all the ingredients.
- Carefully transfer the salad to a serving platter, and then sprinkle the crumbled bacon on top of it.
