Radicchio and haricot vert salad with candied walnuts

Ingredients:

  • /4 cup walnuts
  • /4 cup (packed) dark brown sugar
  • teaspoons plus 1/4 cup walnut oil
  • 1/2 tablespoons seasoned rice vinegar, divided
  • garlic clove, pressed
  • head of Bibb lettuce, coarsely torn
  • /2 large head of radicchio, thickly sliced
  • cups frozen haricots verts or small slender green beans, thawed

Instructions:

  1. Mix walnuts, sugar, 2 teaspoons of oil, and 1 tablespoon of vinegar in a medium nonstick pan. Stir on medium heat until the nuts are fully coated with syrup, for approximately 2 minutes. Add salt and pepper to taste. Place the nuts on a piece of foil. Spread them out and either freeze on the foil for 5 minutes or let them cool down completely at room temperature.
  2. Combine the remaining 1/4 cup of oil, 2 1/2 tablespoons of vinegar, and minced garlic in a large bowl. Season the dressing with salt and pepper. Add Bibb lettuce, radicchio, haricots verts, and the prepared nuts. Mix everything together until evenly coated.
