Quinoa salad with toasted pine nuts, raisins and lime
Delicious quinoa salad with a delightful mix of toasted pine nuts, sweet raisins, and zesty lime dressing. A perfect blend of flavors and textures.
Ingredients:
- 3 cups quinoa
- 110g pine nuts
- 1/2 cup lime juice (or up to taste)
- Grated zest of two limes
- 2 garlic cloves, crushed
- 1 tablespoon cumin
- 1 generous cup of raisins
- 1/4 cup good quality extra virgin olive oil
- 1 cup parsley, minced
- Salt and freshly ground pepper
Instructions:
- Heat the pine nuts in a dry pan on medium-low heat. Keep stirring the pan regularly for even toasting. Once the nuts are aromatic and lightly browned, remove the pan from the heat and transfer the pine nuts to a plate to cool.
- Rinse the quinoa and place it in a pot with six cups of water. Bring it to a boil, then lower the heat to medium-low, cover the pot, and let it simmer for approximately 15 minutes, until the grains turn translucent and the germ unfurls. Drain the quinoa and allow it to cool.
- In a mixing bowl, combine the quinoa with all the ingredients except the pine nuts. Let the flavors meld for one to two hours. Add the toasted pine nuts, mix thoroughly, taste, adjust the acidity if necessary, and serve.
