Quinoa salad with shredded greens & raisins

Delicious quinoa salad blending shredded greens with sweet raisins, promising a delightful mix of textures and flavors. Perfect for a healthy meal.

Ingredients:

  • 150g quinoa
  • 3 tbsp balsamic vinegar
  • 2 tbsp extra virgin olive oil
  • 200g cavolo nero, shredded
  • 1 red onion, finely chopped
  • 1 green pepper, deseeded and chopped into small pieces
  • 30g raisins
  • 2 small avocados, chopped
  • 40g vegetarian feta

Instructions:

  1. Clean the quinoa by rinsing it in a sieve under cold water until the water is clear. Cook according to the package instructions for 20 minutes. Let it sit for 5 minutes, then rinse again and drain well by gently pressing in the sieve.
  2. While the quinoa is cooking, combine the vinegar and oil in a large bowl. Add the cavolo nero and use your hands to massage the dressing into the leaves, making them more tender.
  3. Combine the cooked quinoa with onions, peppers, and raisins, then mix well. Place half of the mixture on plates, top with one diced avocado, half of the crumbled feta, and toss gently. The remaining salad can be refrigerated for up to three days. Garnish with the rest of the avocado and feta before serving.
