Quinoa salad with radishes, avocado, and citrus vinaigrette

Ingredients:
- 2 cups Chicken stock
- 2 cups Water
- 2 cups Quinoa
- 2 Lemons, zested and juiced
- 1 Lime, zested and juiced
- 1 Orange, zested
- 1 Shallot, finely chopped
- 2 Garlic cloves, finely chopped
- Salt and pepper, to taste
- 2/3 cup Olive oil
- 1 Bunch radishes (about nine), trimmed and thinly sliced
- 2 Avocados, pitted, skinned and chopped
- 1/3 cup Chopped fresh parsley
Instructions:
- Start by heating the chicken stock and water in a saucepan until it reaches a boiling point. Stir in the quinoa, reduce the heat to medium, and cover the saucepan. Let it simmer for approximately 18 minutes.
- Once the cooking is complete, take the saucepan off the heat and allow the quinoa to sit for 5 minutes. Transfer it to a spacious bowl, fluff it up using a fork, and let it cool down.
- Combine the lemon juice, lemon zest, lime juice, lime zest, orange zest, shallot, garlic, salt, and pepper in a separate bowl. Slowly drizzle in the olive oil while whisking continuously.
- Mix the radishes, avocado, and parsley into the quinoa. Drizzle the prepared vinaigrette over the quinoa mixture and gently mix everything together. Taste the dish and adjust the seasoning with more salt and pepper, if desired.
