Quinoa salad with grapes and pine nuts
Delicious quinoa salad featuring the perfect combination of sweet grapes and crunchy pine nuts. A culinary delight for your taste buds!
Ingredients:
- 2 cups low sodium chicken or vegetable stock
- 1 cup quinoa
- 1 cup green grapes, halved
- ½ cup red grapes, halved
- ½ cup blueberries
- ¾ cup pine nuts, toasted
- 2 tablespoons chopped fresh parsley
- ½ cup blue cheese, crumbled
- 2 tablespoons apple cider vinegar
- 1 teaspoon Dijon mustard
- 3 tablespoons extra virgin olive oil
- Salt
- Pepper
Instructions:
- Combine the broth and quinoa in a medium saucepan and bring it to a boil. Lower the heat, cover the pan, and let it simmer for about 15 minutes until the broth is almost absorbed and the quinoa is soft. Take it off the heat and allow it to sit for 5 minutes with the lid on. Transfer the cooked quinoa to a big bowl and let it cool down completely.
- Mix in both varieties of grapes, blueberries, pine nuts, parsley, and blue cheese with the quinoa that has cooled down. In a small bowl, blend the apple cider vinegar and mustard together. Gradually add the olive oil while whisking and season with salt and pepper. Pour the vinaigrette over the quinoa salad and gently mix it to cover. Adjust the seasoning with salt and pepper as needed. Enjoy the salad cold or at room temperature.
