Quinoa salad with feta, blood oranges and mint

Indulge in a zesty Quinoa Salad featuring tangy feta, juicy blood oranges, and refreshing mint. A delightful combination of flavors for a culinary treat.

Ingredients:

  • 1 cup quinoa
  • 1.25 cups water
  • 3 blood oranges
  • 1 shallot, finely chopped
  • 1/3 cup pine nuts, toasted
  • 1/4 cup chopped mint
  • 3 tablespoons olive oil
  • 90g feta cheese
  • salt and pepper

Instructions:

  1. Prepare the quinoa: Wash the quinoa using a fine mesh strainer. Boil water with a pinch of salt in a small saucepan. Add the quinoa and lower the heat to simmer. Cover and cook for about 15 minutes until the quinoa is soft and fluffy.
  2. While the quinoa is cooking, ready the oranges. Remove the peel from two oranges and cut them into small, bite-sized pieces, making sure to discard any tough parts. If you are familiar with supreming an orange, you can also do that step at this point.
  3. Mix together the cooked quinoa, diced or supremed oranges, shallots, pine nuts, and mint. Squeeze the juice from the remaining orange onto the salad and drizzle it with approximately 2-3 tablespoons of olive oil. Carefully fold in the feta cheese. Taste the salad and season with salt and pepper to your liking.
