Quinoa salad with currants, pistachios, red onion and mint
Indulge in a vibrant quinoa salad bursting with the flavors of sweet currants, crunchy pistachios, zesty red onion, and fresh mint. A delightful medley for your taste buds!
Ingredients:
- 1 cup quinoa
- 2 cups water
- 1/4 cup dried currants
- 1 medium red onion
- 1/4 cup toasted pistachios
- 1 tablespoon fresh mint, chopped or chiffonade
- generous pinches of salt to taste
- 2-3 tablespoons extra virgin olive oil
Instructions:
- In a small saucepan, mix water, quinoa, currants, and a pinch of salt. Heat until it starts boiling, then lower the heat to a simmer and cover with a small gap for steam to escape. Cook until all the water is absorbed, which should take about 15 minutes.
- While the quinoa is cooking, finely chop the red onion. In a large pan, cook the onion in a generous amount of 1-2 tablespoons of olive oil over low heat until soft and see-through, for approximately 10 minutes. Add more olive oil if necessary to avoid the onions from browning.
- Coarsely chop the pistachios. Once the onions are cooked, add the pistachios to the pan.
- Once the quinoa is ready, combine it with the onions and pistachios in the pan. Mix thoroughly. Season with salt as needed. Add mint, mix, and serve!
