Quinoa & pine nut salad
Delight in the delicious blend of nutty quinoa and crunchy pine nuts in this vibrant salad. A burst of flavors awaits in each refreshing bite.
Ingredients:
- 2 cups Cooked Quinoa (I used multi colored)
- 3 tablespoons Raw Pine Nuts
- 2 Chopped Large Tomatoes (or 8 cherry tomatoes, halved)
- 1 Diced Avocado
- 2-3 tablespoons Olive Oil
Instructions:
- Chill cooked Quinoa in the refrigerator.
- Warm a small skillet over medium high heat.
- Cook the Pine Nuts until they are golden brown (approximately 2 minutes), stirring frequently
- Combine chopped Tomatoes, Avocado, and Olive Oil in a medium bowl.
- Mix in the Pine Nuts and Quinoa, then season with Salt and Pepper. Bon appétit!
