Quinoa & pine nut salad

Delight in the delicious blend of nutty quinoa and crunchy pine nuts in this vibrant salad. A burst of flavors awaits in each refreshing bite.

Ingredients:

  • 2 cups Cooked Quinoa (I used multi colored)
  • 3 tablespoons Raw Pine Nuts
  • 2 Chopped Large Tomatoes (or 8 cherry tomatoes, halved)
  • 1 Diced Avocado
  • 2-3 tablespoons Olive Oil

Instructions:

  1. Chill cooked Quinoa in the refrigerator.
  2. Warm a small skillet over medium high heat.
  3. Cook the Pine Nuts until they are golden brown (approximately 2 minutes), stirring frequently
  4. Combine chopped Tomatoes, Avocado, and Olive Oil in a medium bowl.
  5. Mix in the Pine Nuts and Quinoa, then season with Salt and Pepper. Bon appétit!
