Quinoa, pea & avocado salad
Discover the perfect blend of nutty quinoa, crisp peas, and creamy avocado in this refreshing and nutritious salad. Packed with flavor and texture in every bite!
Ingredients:
- 100g frozen peas
- juice 1 lemon
- 2 tbsp olive oil
- ½ small pack mint, leaves only, chopped
- ½ small pack chives, snipped
- 250g pack ready-to-eat red & white quinoa mix (we used Merchant Gourmet)
- 1 avocado, stoned, peeled and chopped into chunks
- 75g bag pea shoots
Instructions:
- Place the peas in a big bowl that can withstand heat, pour freshly boiled water over them, and let them rest.
- Combine lemon juice with seasoning in a small bowl. Gradually whisk in olive oil while continuing to whisk, then add mint and chives.
- After draining the peas, transfer them to a large serving dish. Mix in the quinoa, ensuring to separate any lumps. Drizzle the dressing over it, and gently mix in the avocado and pea shoots. Serve right away.
