Quinoa-herb tomato & balsamic salad

Delight in the flavors of quinoa, fresh herbs, juicy tomatoes, and tangy balsamic in this vibrant salad bursting with vibrant, nutritious goodness.

Ingredients:

  • ¼ cup balsamic vinegar
  • 3 tablespoons extra-virgin olive oil, divided
  • ¾ teaspoon kosher salt
  • ¼ teaspoon ground pepper
  • 4 cups grape tomatoes (about 540g), halved
  • ½ cup thinly sliced white onion
  • ⅓ cup chopped fresh basil or parsley, plus more for serving
  • 2 cups cooked quinoa

Instructions:

  1. In a spacious bowl, mix together vinegar, 2 tablespoons of oil, salt, and pepper. Include tomatoes, onion, and basil (or parsley); mix well. Chill in the refrigerator, stirring occasionally, for a minimum of 1 hour. Prior to serving, introduce quinoa, the remaining 1 tablespoon of oil, and additional fresh herbs, if preferred. Stir well to make sure everything is coated.
