Quinoa-herb tomato & balsamic salad

Ingredients:
- ¼ cup balsamic vinegar
- 3 tablespoons extra-virgin olive oil, divided
- ¾ teaspoon kosher salt
- ¼ teaspoon ground pepper
- 4 cups grape tomatoes (about 540g), halved
- ½ cup thinly sliced white onion
- ⅓ cup chopped fresh basil or parsley, plus more for serving
- 2 cups cooked quinoa
Instructions:
- In a spacious bowl, mix together vinegar, 2 tablespoons of oil, salt, and pepper. Include tomatoes, onion, and basil (or parsley); mix well. Chill in the refrigerator, stirring occasionally, for a minimum of 1 hour. Prior to serving, introduce quinoa, the remaining 1 tablespoon of oil, and additional fresh herbs, if preferred. Stir well to make sure everything is coated.
