Quinoa-feta patties

Ingredients:
- 2 cups quinoa, rinsed and drained
- 4 cups water
- Kosher salt
- 3 tablespoons olive oil plus 1
- 1 medium white onion, diced
- 3 cloves garlic, peeled and diced
- 10-12 large leaves of kale, stems removed, then roughly torn or chopped
Instructions:
- Begin by combining the quinoa, water, and 1/2 teaspoon of kosher salt in a medium pot over high heat. Stir occasionally and allow the mixture to come to a vigorous boil. Lower the heat to a gentle simmer and cook until the quinoa has soaked up all the water, typically around 15 minutes. Once done, take the pot off the heat and set it aside.
- Next, heat up olive oil in a large sauté pan over medium heat. Stir in onions and cook until they turn translucent, which usually takes about 4 minutes. Introduce garlic and kale (adding in batches if necessary) to the pan. Stir as the kale wilts and shrinks down. Should the kale stick, pour in 1/4 cup of water. Season with salt and pepper to your liking, mix everything well, and then remove the pan from the heat.
- In a spacious serving bowl, combine the cooked quinoa with the sautéed kale and onions. If the mixture seems dry, drizzle a tablespoon of olive oil and toss. Season with salt and pepper according to your taste preference before serving.
