Quinoa-feta patties

Ingredients:

  • 2 cups quinoa, rinsed and drained
  • 4 cups water
  • Kosher salt
  • 3 tablespoons olive oil plus 1
  • 1 medium white onion, diced
  • 3 cloves garlic, peeled and diced
  • 10-12 large leaves of kale, stems removed, then roughly torn or chopped

Instructions:

  1. Begin by combining the quinoa, water, and 1/2 teaspoon of kosher salt in a medium pot over high heat. Stir occasionally and allow the mixture to come to a vigorous boil. Lower the heat to a gentle simmer and cook until the quinoa has soaked up all the water, typically around 15 minutes. Once done, take the pot off the heat and set it aside.
  2. Next, heat up olive oil in a large sauté pan over medium heat. Stir in onions and cook until they turn translucent, which usually takes about 4 minutes. Introduce garlic and kale (adding in batches if necessary) to the pan. Stir as the kale wilts and shrinks down. Should the kale stick, pour in 1/4 cup of water. Season with salt and pepper to your liking, mix everything well, and then remove the pan from the heat.
  3. In a spacious serving bowl, combine the cooked quinoa with the sautéed kale and onions. If the mixture seems dry, drizzle a tablespoon of olive oil and toss. Season with salt and pepper according to your taste preference before serving.
