Quinoa couscous salad
Discover the delightful fusion of fluffy quinoa and light couscous in this vibrant salad. Packed with fresh ingredients and bold flavors, it's a culinary masterpiece!
Ingredients:
- 1 Small Boston Lettuce, Chopped
- 1 Large Honeycrisp Apple, Diced
- 60g Feta Cheese, Diced
- 1 cup Quinoa Couscous Pilaf
- 5 tablespoons Newman's Own Roasted Garlic Dressing
Instructions:
- Combine chopped romaine lettuce, diced apple, diced feta cheese, pilaf, and dressing in a spacious bowl. Enjoy your meal!
- I prefer using a pre-made pilaf mix from the store, but in case it's not available, you can prepare your own. Cook 1/2 cup of black quinoa. Prepare 1 cup of couscous with vegetable broth, along with a dash of onion powder, garlic powder, salt, and white pepper. Once both are cooked, mix them together and fluff with a fork. This mixture can be prepared in advance and refrigerated for 1-2 weeks.
