Quick toaster-oven pizza

Try this delicious and easy toaster-oven pizza recipe! Crispy crust, gooey cheese, and flavorful toppings make a perfect meal in minutes.

Ingredients:

  • 1 8-inch whole-wheat tortilla
  • 1 teaspoon plus 1 tablespoon extra-virgin olive oil, divided
  • 5 thin slices tomato
  • 3 thin slices red onion
  • 3 tablespoons shredded mozzarella cheese
  • 1 tablespoon chopped fresh basil or 1 teaspoon dried
  • 2 teaspoons balsamic vinegar
  • 2 cups packed mixed salad greens

Instructions:

  1. Place a tortilla on a toaster-oven pan lined with foil. Coat the tortilla with 1 teaspoon of oil. Add tomato, onion, and mozzarella on top. Bake until the cheese is melted and the tortilla is beginning to become crispy, for about 7 to 9 minutes. Take out from the oven and sprinkle basil on top. Slice into wedges.
  2. Drizzle the rest of the 1 tablespoon of oil and vinegar on the salad and accompany it with the pizza.
