Quick taco salad

Ingredients:

  • 340g ground round
  • 2 cups chopped yellow, red, or green bell pepper
  • 2 cups bottled salsa
  • ¼ cup chopped fresh cilantro
  • 4 cups coarsely chopped romaine lettuce
  • 2 cups chopped plum tomato
  • 1 cup (110g) shredded reduced-fat sharp cheddar cheese
  • 1 cup crumbled baked tortilla chips (about 12 chips)
  • ¼ cup chopped green onions

Instructions:

  1. Heat up beef and bell pepper in a big nonstick pan on medium-high temperature until beef turns brown; mix it to break it into small pieces. Pour in salsa; let it heat until it starts boiling. Mix in cilantro; keep it heated.
  2. Arrange 1 cup of lettuce on 4 plates each; layer with 1 cup of meat mixture. Add 1/2 cup tomato, 1/4 cup cheese, 1/4 cup chips, and 1 tablespoon onions on each serving.
