Quick lunch tortellini salad with figs, walnuts, prosciutto & greens
Indulge in a scrumptious tortellini salad bursting with flavors of figs, crunchy walnuts, savory prosciutto, and fresh greens. Perfect for a quick and satisfying lunch!
Ingredients:
- 1 (10-ounce) container fresh cheese tortellini
- 1/2 cup walnuts
- 1/2 cup dried Mission figs, stems removed (swap in fresh figs if you have them!)
- 4 slices prosciutto
- 140g salad greens (about 5 big handfuls)
- 2 to 4 tablespoons balsamic vinaigrette
Instructions:
- Bring a pot of water to a boil over high heat. Stir in a teaspoon of salt and the tortellini, and cook until the tortellini float to the surface and become soft, approximately 6 to 8 minutes. Strain the tortellini and put them aside.
- In the meantime, preheat the oven to 350°F. Scatter the walnuts on a baking sheet and bake until they release aroma and start to turn golden, for about 5 to 7 minutes. Move the walnuts to a cutting board and roughly chop them when they have cooled down a bit.
- Remove the stalks from the Mission figs and chop them into rough pieces. Tear the prosciutto into long strips.
- Mix the cooked tortellini, figs, prosciutto, and salad greens in a bowl. Blend with sufficient balsamic vinaigrette to cover them well — begin with 2 tablespoons and adjust to your preference. Portion the salad into individual serving bowls and sprinkle the chopped walnuts on top.
