Quick lentil salmon salad

Ingredients:

  • ¾ cup brown lentils
  • ½ cup chopped red onion plus 1/4 cup thinly sliced, divided
  • 2 cloves garlic, minced
  • ¾ teaspoon salt
  • ¼ cup extra-virgin olive oil
  • 3 tablespoons red-wine vinegar
  • ¾ teaspoon dried thyme
  • ¼ teaspoon ground pepper
  • 1 15-ounce can salmon, drained
  • 1 cup carrot ribbons
  • 1 cup sliced celery
  • 4 lemon wedges for serving

Instructions:

  1. Bring a medium saucepan of water to a boil. Place lentils and chopped onion into the boiling water, then lower the heat to simmer gently until the lentils become tender, for about 11 to 13 minutes. Afterward, drain the lentils well.
  2. While waiting, crush garlic and salt together into a paste using the flat side of a chef's knife (or a fork). Put the paste into a medium-sized bowl and mix in oil, vinegar, thyme, and pepper.
  3. Get rid of the skin and bones from the salmon, then break the salmon into small pieces in a large bowl. Combine sliced onion, carrot, and 3 tablespoons of the prepared dressing with the salmon; delicately mix them together. Next, mix celery and the cooked lentils with the remaining dressing; gently fold to blend. Serve by dividing the lentils into 4 bowls, topping them with the salmon salad, and providing lemon wedges on the side.
