Quick and easy lemony chickpea salad

Delight your taste buds with this zesty chickpea salad recipe! Packed with tangy lemon flavors and wholesome chickpeas, it’s a refreshing culinary delight.

Ingredients:

  • 1 16oz can of organic, unsalted garbanzo beans (drained & rinsed)
  • 1 cucumber, peeled and chopped
  • 1 generous handful of fresh parsley, chopped
  • 1–2 tablespoons of fresh mint, chopped
  • 2–3 tablespoons of plain, greek yogurt
  • 1 teaspoon of dijon mustard
  • juice of 1 small lemon
  • pinch of sea salt
  • pinch of fresh ground black pepper

Instructions:

  1. Mix together all the ingredients in a spacious bowl and give them a light stir
  2. Chill in the fridge before serving…and savor the flavors!
