Purple potato salad

Ingredients:

  • 910g small purple potatoes
  • 1 purple onion, diced
  • 2 celery stalks, chopped
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh parsley
  • 1 cup mayonnaise
  • 1/4 cup Dijon mustard
  • 1 teaspoon celery seed
  • 1 teaspoon cayenne
  • 1 tablespoon white vinegar
  • 1 lemon, juiced
  • Salt and pepper, to taste

Instructions:

  1. Start by heating a pot of water with salt until it boils. Cook the potatoes until they are soft when pierced with a fork, approximately 20 minutes. Once done, drain the water, rinse the potatoes with cold water, and then cut them into quarters. Place the slightly warm potatoes in a big bowl and mix them with onion, celery, dill, and parsley. In a separate bowl, combine mayonnaise, mustard, celery seed, cayenne pepper, vinegar, and lemon juice. Taste the mixture and adjust the seasoning if needed. Pour the dressing over the vegetable mixture. Gently mix everything together ensuring the potatoes remain intact. Season with salt and pepper to taste.
