Provencal pasta salad

Delicious Provencal pasta salad recipe featuring vibrant flavors of ripe tomatoes, fragrant basil, tangy olives, and authentic French herbs. Ideal for a refreshing and satisfying dish.

Ingredients:

  • Kosher salt and freshly ground black pepper
  • 1/3 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 small shallot, minced
  • 230g dried ziti
  • 1 cup jarred artichoke hearts, drained and sliced
  • 1/2 cup sliced fresh basil
  • 1/2 cup jarred roasted red peppers, drained and sliced
  • 1/4 cup pitted Kalamata olives, quartered
  • 2 medium vine-ripe tomatoes, chopped

Instructions:

  1. Heat a big pot of salted water until it starts to boil.
  2. Mix the olive oil, vinegar, shallot, 1/2 teaspoon salt, and a couple of twists of pepper in a spacious bowl.
  3. Put the pasta into the boiling water and cook following the instructions on the package. Drain and wash with cold water to cool; then, combine it with the dressing in the bowl.
  4. Incorporate the artichokes, basil, red peppers, olives, and tomatoes into the bowl and mix well. Add salt and pepper to taste. For the best flavor, it's recommended to enjoy the pasta salad immediately.
