Prawn, quinoa & tangerine salad

Ingredients:
- 65 grams quinoa
- 15 grams spinach
- 100 grams cooked prawns, peeled
- 1 piece tangerine
- 2 pieces beetroots
- 1 piece Lemon juice
- 1/2 piece avocado
Instructions:
- Wash the quinoa with cold water prior to cooking.
- Prepare the quinoa as per the package directions (use 100ml water for every 50g of quinoa, boil then let it simmer for 15 minutes).
- Arrange all the dishes on plates and incorporate the cooked quinoa.
- Drizzle with the juice of one lemon or your preferred salad dressing. You might want to experiment with my tasty sesame dressing.
