Potato salad with salami gremolata

Ingredients:

  • 910g small (1 & 1/2 to 2 inch diameter) red potatoes, scrubbed but not peeled
  • 2 tablespoons table salt or fine sea salt
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons sherry vinegar
  • 1/2 tablespoon Dijon mustard
  • 1/2 teaspoon smoked sweet paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon ground black pepper
  • 1/8 teaspoon cayenne pepper (optional)
  • 2 to 90g thinly sliced Genoa salami
  • 2 medium garlic cloves
  • 1/3 cup chopped Italian parsley (lightly packed)
  • 3 green onions

Instructions:

  1. Slice the potatoes into slices that are 1/4 inch thick. Put the potatoes, 6 cups of water, and salt in a big pot. Bring it to a boil over high heat. Once it starts boiling, lower the heat to medium. Cook until the potatoes are soft enough to be easily pierced with a sharp knife, which should take around 5 minutes. Save 1/4 cup of the cooking water, then drain the potatoes in a colander. Arrange the potatoes in a single layer on a sheet pan.
  2. As the potatoes are cooking, mix together olive oil, vinegar, Dijon mustard, paprika, thyme, pepper, and cayenne in a small bowl. Add the reserved cooking water and whisk until everything is well blended. Pour this mixture evenly over the potatoes. Let it sit for 10 to 15 minutes.
  3. Cut the salami into pieces that are between 1/8th and 1/4th of an inch thick. Cook the salami in a sauté pan over medium heat, stirring occasionally until the fat has melted out and the salami turns crispy, which should take about 5-6 minutes. While the salami is crisping up, finely chop the garlic. Once the salami is crispy, add the garlic to the pan and cook it while stirring continuously until the garlic becomes fragrant, for about 30-45 seconds. Transfer this mixture to a fine mesh strainer.
  4. Finely chop the white and light green parts of the green onions and place them in a large bowl. Chop the parsley and add it. Mix in the salami mixture and stir it all together. Add the potatoes and dressing, then gently combine until everything is mixed well. Let it sit for a few minutes to allow the flavors to meld together. Serve.
