Potato "salad" with crispy shallots, pea shoots & whole grain mustard aioli

Ingredients:
- 5 red new potatoes
- 1/2 large, or one small sweet potato
- 1 bunch pea shoots
- 1 medium shallot
- 1 bunch chives
- 2 farm fresh egg yolks
- 3/4 cup up to 1 Cup, light olive oil
- 2 teaspoons lemon juice
- 1 teaspoon apple cider or white wine vinegar
- 1 garlic clove, chopped
- 1 tablespoon whole grain mustard
- grapeseed oil, salt & pepper for cooking
Instructions:
- Prepare the aioli in advance or the day before. Combine the egg yolks and half of the lemon/vinegar mixture in a blender (or a bowl if doing it manually). Incorporate a few drops of oil into the mixture and blend or whisk until it turns into an emulsion. As soon as the emulsion forms, slowly pour in oil until you achieve a thick mayonnaise-like consistency. Introduce the remaining lemon mixture and minced garlic. Season with salt and additional lemon juice to your preference. Reserve half of the aioli for later use (unless serving a large group) and mix the rest with whole grain mustard.Subsequently, simmer your potatoes in salted water whole or halved. Also, include some slices of sweet potatoes for variety.Cut the shallots into thin rounds and cook them in a hot pan with grapeseed oil until they turn brown and crispy. Transfer to a paper towel to drain.Next, prepare the sweet potato rounds (as they cook faster than the other potatoes). Trim the edges and sauté them briefly in the same pan used for shallots to add texture. Cook for 2-3 minutes per side and then set aside on a paper towel.Once the potatoes are cooked, it's time to put together your salad. Quarter the potatoes, season with salt, pepper, and olive oil (if desired).Start by spreading a layer of aioli on the serving platter as the base. Arrange the potatoes on top of the aioli as desired, alternating with the sweet potatoes. Top with the crispy shallots, pea shoots, and chopped chives. There you have it! This salad is bursting with flavors and would be a fantastic addition to any gathering or cookout.
