Potato salad
Delicious and creamy potato salad recipe with a perfect blend of flavors. A classic side dish for any occasion - easy to make and always a crowd-pleaser.
Ingredients:
- 2270g red potatoes, peeled and cut into 1/2-inch cubes
- 2 teaspoons salt, plus more to taste
- 4 hard-boiled eggs, peeled and diced
- 3/4 cup mayonnaise
- 1/2 cup sweet pickle relish
- Black pepper, to taste
Instructions:
- Start by putting the potatoes in a medium-sized pot. Sprinkle some salt and pour enough water to cover the potatoes completely. Cook the potatoes until they are soft enough to be pierced by a knife but still firm (make sure not to cook them too much), which should take roughly 30 minutes.
- Once the potatoes are cooked, drain them and place them into a spacious mixing bowl to cool down. Mix in the boiled eggs, mayonnaise, and relish carefully. Season with salt and pepper according to your taste. Keep the mixture in the fridge until you are prepared to serve.
