Potato salad

Delicious and creamy potato salad recipe that will tantalize your taste buds. Perfect for BBQs, picnics, or as a side dish for any meal. Easy to make and full of flavor.

Ingredients:

  • 2270g red potatoes, peeled and cut in 1/2-inch cubes
  • 2 teaspoons salt, plus more to taste 
  • 4 hard-boiled eggs, peeled and diced 
  • 3/4 cup mayonnaise 
  • 1/2 cup sweet pickle relish 
  • Black pepper 

Instructions:

  1. Begin by cooking the potatoes in a medium-sized pot or pressure cooker (refer to the Note). Season with 2 teaspoons of salt and pour in sufficient water to submerge the potatoes completely. Cook the potatoes until they are soft enough to be pierced with a knife tip yet still maintain their shape, which should take around 30 minutes. Once done, drain the potatoes, place them in a spacious mixing bowl, and let them cool down entirely. Mix in the diced eggs, mayonnaise, and sweet relish with a light hand. Season with salt and pepper according to your preferences. Keep the dish chilled in the refrigerator until it's time to be served.
