Potato salad

Ingredients:
- 2270g red potatoes, peeled and cut in 1/2-inch cubes
- 2 teaspoons salt, plus more to taste
- 4 hard-boiled eggs, peeled and diced
- 3/4 cup mayonnaise
- 1/2 cup sweet pickle relish
- Black pepper
Instructions:
- Begin by cooking the potatoes in a medium-sized pot or pressure cooker (refer to the Note). Season with 2 teaspoons of salt and pour in sufficient water to submerge the potatoes completely. Cook the potatoes until they are soft enough to be pierced with a knife tip yet still maintain their shape, which should take around 30 minutes. Once done, drain the potatoes, place them in a spacious mixing bowl, and let them cool down entirely. Mix in the diced eggs, mayonnaise, and sweet relish with a light hand. Season with salt and pepper according to your preferences. Keep the dish chilled in the refrigerator until it's time to be served.
