Potato salad

Try our delicious Potato Salad recipe. Made with creamy mayonnaise, tangy mustard, and crispy bacon, it's a perfect side dish for any occasion.

Ingredients:

  • 910g small red potatoes scrubbed and quartered
  • 450g bacon, chopped
  • 2 tablespoons red wine vinegar
  • 3/4 cup mayonnaise
  • 3 tablespoons whole-grain mustard
  • 6 scallions, chopped in 1/4-inch segments
  • 1 red onion, diced
  • 2 tablespoons sugar
  • Salt and pepper
  • 2 hard boiled eggs, chopped

Instructions:

  1. Start by submerging the potatoes in cold water in a medium saucepan. Allow the water to reach boiling point before reducing the heat to medium. Let the potatoes simmer until they are easily pierced with a fork, which should take approximately 15 minutes. Meanwhile, in a skillet, cook the bacon over low heat until it becomes crispy. Once done, place the bacon on a paper towel to absorb excess grease. Once the potatoes are cooked, drain them but avoid rinsing them with cold water. Instead, leave them to cool on a sheet pan for around 6 to 8 minutes. In a small bowl, mix together vinegar, mayonnaise, mustard, scallions, onion, sugar, salt, and pepper. Transfer the potatoes to a mixing bowl and sprinkle the bacon and chopped hard-boiled eggs on top. Gently fold the mayonnaise mixture into the potatoes before serving at room temperature.
