Ponzu smashed cucumber salad

Ingredients:

  • 450g Persian cucumbers
  • Kosher salt 
  • 3 tablespoons ponzu sauce 
  • 2 teaspoons fresh lemon juice 
  • 1 teaspoon coconut aminos or 1/4 teaspoon sugar 
  • 1 teaspoon sambal oelek or sriracha 
  • 1 teaspoon toasted sesame oil 
  • 1/2 teaspoon finely grated fresh ginger 
  • 2 scallions, finely chopped 
  • 2 garlic cloves, finely grated 
  • 3 tablespoons chopped fresh cilantro 

Instructions:

  1. Cut the cucumbers in half lengthwise. Lay them on a cutting board with the cut side facing down, and gently use the flat side of a chef's knife to lightly crush the cucumbers until they slightly break open but remain intact. Cut the crushed cucumbers into 1-inch pieces.
  2. Place the cucumbers in a colander and mix in 1/4 teaspoon of salt. Place a weight (such as a bag of ice) on top of the cucumbers and let them sit for 15 to 30 minutes to drain.
  3. In a medium bowl, mix together the ponzu, lemon juice, coconut aminos, sambal, sesame oil, ginger, scallions, and garlic. Add the cucumbers and cilantro, and toss everything together until well combined.
