Pomegranate & guava salad

Ingredients:

  • 6 guavas
  • 4 cups pomegranate arils
  • 2 cups ice-cold water
  • 3 tablespoons fresh lemon juice
  • 3 tablespoons granulated sugar

Instructions:

  1. Slice the guavas in half, remove the peels and seeds, and collect them in a bowl.
  2. Dice the guava into small pieces and transfer to a bowl.
  3. Place the guava peels and seeds into a blender.
  4. Combine water, lemon juice, and sugar in the blender with the guava peels and seeds, and blend on medium speed until mixture is smooth (approximately 2 minutes).
  5. Strain the guava mixture through a sieve to obtain a refined juice (if desired, adjust sweetness by adding more sugar).
  6. Combine the diced guava and pomegranate seeds with the guava juice mixture and serve!
