Pomegranate-chicken salad

Indulge in the flavorful combination of tender chicken and juicy pomegranate seeds in this refreshing salad. Perfect balance of sweet and savory notes.

Ingredients:

  • 1/2 cup mayonnaise
  • 1/2 cup fat-free plain yogurt
  • 1/4 cup Dijon mustard
  • 2 tablespoons lemon juice
  • Kosher salt and freshly ground black pepper
  • 1 rotisserie chicken, shredded
  • 1 cup pomegranate seeds
  • 2 tablespoons chopped fresh chives
  • 1 stalk celery, sliced
  • Baby arugula, for serving, optional

Instructions:

  1. Mix together the mayonnaise, yogurt, Dijon mustard, lemon juice, salt, and pepper. Taste the mixture and add more seasonings if required.
  2. Place the shredded chicken, pomegranate seeds, chives, and celery in a bowl. Drizzle some of the dressing along the edges of the bowl and mix well. Add additional dressing to taste. Adjust seasonings if necessary.
  3. If preferred, serve over a bed of baby arugula.
