Poached salmon

Ingredients:
- 3 cups vegetable stock
- 1 cup dry white wine, such as Sauvignon Blanc

- Two 6-ounce pieces skin-on salmon
- Kosher salt and freshly ground black pepper
- Arugula salad, for serving

Instructions:
- Mix together the broth, white wine, thyme, minced garlic, shallot, and lemon peel in a large, wide pot and heat until it starts to simmer. Gently place the salmon in the pot, season with a bit of salt and pepper. Partly cover the pot and let it cook until the salmon is done, which should take approximately 8 to 10 minutes.
